Flan de huevo

This is a recipe I love, everyone knows how to make flan but i want to share the way i make mine! Dont take it too seriously though, specially the caramel making part...

This is all you need:

  • Sugar
    • For the caramel, measure with your heart
    • For the mixture, 120 grams
  • 6 eggs
  • 600ml of milk
  • Vanilla extract
  • A large flan mold, or two small flan molds
  • A larger oven-okay mold or recipient, at least half as tall as your flan mold. You should be able to fit the flan mold inside it

thats all!

Now you need to follow these very estrict and dangerous steps

  1. Pour some sugar to your flan mold and put it to the stove flame, you need to watch it so it doesnt burn. Let it do its thing and dont touch it while its melting, but spin the mold so the fire reachs every last bit, then there will be a point where you need to stir it a little so all the sugar gets to melt. DONT LET IT BURNNNN!!! you will know its burnt because it will smell... well, burnt
  2. Once its a light caramel color and fully melted you can choose to let it over the fire a little more so it darkens a bit, or take it out and being very careful spin the mold so the caramel gets on the walls of the mold. You can let it cool now, dont be scared if you hear glass breaking, the caramel does that sometimes!

    Note that im using dry caramel for this recipe, some people use a little bit of water with the sugar. Either way is fine, i only learned to make it dry so thats why i use that one.

  3. Now is a good time to preheat your oven to a 150 degrees celcius.
  4. Take your eggs and mix them with sugar, once thats integrated, pour a teaspoon of vanilla extract and the 600ml of milk (a good tip here is using warm milk). Mix until integrated again.

  5. Your mold with caramel should be already be cool by now, using a small strainer pour the mixture in it.
  6. Take your large recipient, put your flan mold inside it and pour boiling water until it reaches at least the middle of your flan mold.
  7. We are almost done, put it in your preheated oven for an hour. You should be able to stick a knife in it and it has to come out clean, if it comes out with like clots of flan it needs a little more time.
  8. Let it cool at least 6 hours in your fridge and demold! Enjoy your flan
